Recepie 

Ghee / Oil For Frying 1 L

For the Outer Wrapping  :

500 gms Maida (Finely Ground Wheat flour)
6 table Spoon Oil or  Ghee (melted)

Some Water for Kneading.

For the Filling :

500-600 gms Khoya ( Milk Cake)
1/2 tsp green Cardamom Powder
25 gms  Almonds cut into small pieces

25 gms Chironji
25 gms Raisins (Kishmish)
25 gms dried Coconut (Fine shredded)
250 gms Sugar

Lets Start…..

• Mix the six tablespoons of oil with the Maida.
• Mix well with your fingers so that the mixture takes the form of breadcrumbs and binds when taken into your fist. No water to be added at this point.
• Slowly start adding some water and  knead lightly.
• Keep adding water as required and knead into a soft but well bound dough.
• Set aside and cover with a damp cloth.This will prevent the drying of dough.
• Now mash the khoya and fry it in a kadai till it becomes light brown in color.
• Add sugar and cardamom powder to the khoya and mix well.
• Lightly fry coconut,raisins,almonds, cashews in seperate pan
• Add to the khoya mixture and stir for 2 minutes and put away from Flame.Allow it to cool down.
• Divide the dough into small balls and roll each ball into 4 inch diameter
• Fill half the ball with the khoya mixture, fold it and seal the ball, twisting the edges inwards.Take care that the filling does not ooze out.
• Prepare all the gujiyas and spread on a moist cloth.

• Heat ghee in a kadhai and deep fry the gujiyas in batches on a medium flame..
• When golden brown in colour, drain the extra Ghee using a tissue Paper lined Colander and remove.
• Store for use in an airtight glass jar

•  Gujiya moulds which you can buy online Here can also be used
• For using moulds, place the rolled dough ball in a greased gujiya mould and fill a tablespoon of filling mixture on one side.
• Moisten the edges of the round  using a little watery maida and water mix and fold one side of the mould over the other.
• Remove the excess edges which can be reused.
• Make a batch before putting in the oil. Cover the unfried ones with damp muslin as dry cover can lead to breakage of the same in the oil.
